4-Ingredient Non-Dairy Cashew ‘Whipped Cream’

Cashew ‘Whipped Cream’ on a Bowl of Fresh Organic Berries

 

Having cashews around the house is a great idea due to their versatility – you can have them raw as a snack, sprinkle them on salads or use them in baking. Cashews are packed with essential minerals and contain 5 grams of protein per ¼ of a cup.

This cashew cream recipe is delicious! The “cream” is sweetened naturally with medjool dates, which provide a good source of minerals and fibre. It is so rich and creamy, you will think you are eating dairy.

 

 

 

Ingredients:

  • 1 cup raw organic cashews (soaked in 1 cup filtered water overnight)
  • 1/3-1/4 cup water
  • 2-3 organic medjool dates
  • 1 teaspoon cinnamon and/or vanilla

Instructions:

1. Soak cashews overnight (4-8 hours)

2. Drain cashews

3. Combine all ingredients in a food processor or high-speed blender until you get a creamy texture where all the     cashew pieces are mixed

4. It can be thinned out to desired texture by slowly adding a little bit of filtered water
