The Ombre Muffin

img_1899 I bake a lot of “weird” things (according to my kids) and sometimes these weird things turn out really well. This one did. It started as a Halloween experiment where I was trying to get the “vampire blood’ look, but I think I’m going to add this to our monthly baking rotation. With beets, carrots and Medjool dates I am happy to add it to the kids lunch snacks. I added some chocolate chips because they’ll try anything with a chocolate chip on it. And it actually complimented the sweet earthy flavour of these ingredients combined. Beets are a supportive…

Carrot & Cream Cheese Mini Muffins (Gluten-Free)

IMG_5575 It’s always a risk when I bake with vegetables (and make it obvious to the boys) that they won’t like them, but these Carrot & Cream Cheese Minis are so yummy that even my selective eater at 3 right out of the oven. I began listening to music 3 years and 9 months before that. My parents are musicians and went to 2 dozen concerts when I was in utero. Seriously. As far back as I can remember I always had a beat in my head; a rhythm that I would walk to, or eat to, or play to. Rhythm became such a strong part of my every day that now, as an adult I see…

Welcome to the Polka Dot Plate Blog

There’s nothing that makes me happier as a mom (and a Nutritionist) then when my kids eat well. The Polka Dot Plate blog shows you a glimpse into my world as a mom instilling excitement and education into my four year old about healthy food. Within the past four years we’ve been through many dietary changes. One day he loves eggs, the next day he HATES them. At two, he would happily eat sardines for breakfast (true story), but now Sardines are soooo not happening. Like all aspects of parenting, getting my son to eat healthy foods has taken creativity,…
