After my Chocolate Avocado cake disappeared into the bellies of my boys in ONE day, I just had to bake something more with this creamy combo.
I love how an avocado acts as the perfect fat once smoothed out, I didn’t need any oil for this recipe.
I decided to use my Vitamix for this recipe because it’s my favourite kitchen toy and it gets the avocado to a pureed state without any little pieces.
Here’s the recipe:
Makes 24 mini muffins
Ingredients:
1 ripe avocado
1 ripe banana
1/4 cup raw honey
7 tbsp unsweetened organic apple sauce (the amount in a snack pack cup)
2 organic eggs
1 1/4 cup millet flour
2 tbsp raw cacao powder
2 tbsp coconut sugar
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp sea salt
1/2 cup dark chocolate chips

This looks great! Can I used another flour besides Millet? Buckwheat, Spelt or Coconut Flour?
These sound delish. I wanted to know what the millet flour could be substituted with.thanks
We haven’t tried yet, but I think it would work!
Would love to hear from you if you have success.
Thanks Rita. It may change the texture slightly with another flour, but it should work. Please let us know if you make it!
can I use spelt flour in place of millet flour?
I haven’t tried it Jen, but I assume that it wouldn’t be a problem. If you do try it please let us know!
So I made them yesterday with oat flour and they turned out ok! Next time I will try coconut or spelt and see what the difference is. If using oats again I would pulse them longer for a finer flour consistency :)
